Soul Cake

What a nice album from Sting. It's just right for this winter, I think.

I can't believe Sting is almost 60 years old. I wonder how he really thinks about Tantric sex at this age.

Banana & Honey Loaf
(This recipe is for delicious home baking with your bread machine.)

8 table vegetable oil = 1 stick butter, softened (I usually do not use butter in my baking.)
1 1/2 cup packed soft light brown sugar *

1/3 cup honey *

2 eggs, beaten *
1 2/3 cups self-rising flour
1/2 teaspoon ground cinnamon or nutmeg
2 large bananas, peeled and mashed with a little lemon juice
(*used organic product.)

1. Remove the kneading blade from the bread pan. Grease and line the bottom and sides of the pan.
2. Place the vegetable oil, sugar and honey in a bowl and beat together until light and fluffy.
3. Gradually beat in the eggs, then fold in the flour and cinnamon or nutmeg.
4. Fold the mashed bananas into the batter until well mixed.
5. Spoon the batter into the bread pan and smooth the surface.
6. Place the bread pan in position in the machine and close the lid.
7. Set the machine to "Bake Only" for 60 minutes. Press Start.

Tip:

* You can use a fine skewer or knife inserted into the middle of the loaf to check
if it comes out clean.
