Blueberry & Walnut Loaf

- 1 1/4 cups dried blueberries
- 2/3 cup boiling water
- 6 tablesp00n vegetable oil=3/4 stick butter, softened
- 1/3 cup packed soft light brown sugar
- 1 egg, beaten
- 1 2/3 cups self-rising flour
- 1 teaspoon baking powder
- 2/3 cup walnuts, chopped

- Place the blueberries in a bowl and pour the boiling water over. Stir to mix, then set aside 15 minutes.
- Remove the kneading blade from the bread pan. Grease and line the bottom and sides of the pan, and set aside.
- Cream the vegetable oil and sugar together in a separate bowl until pale and fluffy, then gradually beat in the egg.
- Fold in the flour, baking powder, walnuts, and blueberries mixture, stirring until well mixed.
- Spoon the batter into the bread pan and smooth the surface.
- Place the bread pan in position in the machine and close the lid. Set the machine to "Bake Only" for 45 minutes.
- Press Start.
