Blueberry & Walnut Loaf

  • 1 1/4 cups dried blueberries
  • 2/3 cup boiling water
  • 6 tablesp00n vegetable oil=3/4 stick butter, softened
  • 1/3 cup packed soft light brown sugar
  • 1 egg, beaten
  • 1 2/3 cups self-rising flour
  • 1 teaspoon baking powder
  • 2/3 cup walnuts, chopped


  1. Place the blueberries in a bowl and pour the boiling water over. Stir to mix, then set aside 15 minutes.
  2. Remove the kneading blade from the bread pan. Grease and line the bottom and sides of the pan, and set aside.
  3. Cream the vegetable oil and sugar together in a separate bowl until pale and fluffy, then gradually beat in the egg.
  4. Fold in the flour, baking powder, walnuts, and blueberries mixture, stirring until well mixed.
  5. Spoon the batter into the bread pan and smooth the surface.
  6. Place the bread pan in position in the machine and close the lid. Set the machine to "Bake Only" for 45 minutes.
  7. Press Start.
